FIELD: process engineering.;SUBSTANCE: invention relates to production and use of starch in starch and starch-based compounds research and quality control. Proposed method comprises preparing starch paste samples to define their viscosity using any of know viscometres, for example, B3-1, B3-246, and etc. Said preparation includes turbulent mixing of aforesaid 200-300 cm3 sample in 350-500 cm3 cup by two-blade impeller at impeller rpm of 2500-3500 rev/min for 25-35 min. Now, paste sample is ready for viscosity determination.;EFFECT: ruling out structurisation of starch molecules thus increasing measurement accuracy.
