The method involves proportionately heating-up a food product (8) by high frequency electromagnetic radiation. The food product is brought between two array elements (9, 10) i.e. field plates, of a cooking appliance (1), where electromagnetic field produced by the electromagnetic radiation is set between the array elements. Gaseous atmosphere (11) present between the food product and one of the array elements is changed into a physical parameter in a defined manner, where the physical parameter is selected from one of temperature, pressure and air humidity. An independent claim is also included for a cooking appliance comprising a cooking chamber.
