The invention relates to a UHT plant for heat treatment of temperature-sensitive food products, especially desserts or desserartigen products, with a preheater zone and a subsequent high-temperature zone according to the preamble of claim 1. It is an object of the present invention, in a UHT system of the generic type to achieve a precise and rapid temperature adjustment of the exiting from the preheater zone food product to the temperature conditions at the entrance of the high-temperature zone, while ensuring a particularly gentle thermal treatment of the food product and to keep the mechanical stress on the food product as low as possible. This is achieved by: • the first line section (L1) being guided via a trimmer heater (10) heated with a third heating medium (M3), • a return line (LR) being formed at a branching point (V1) from the second line section (L2) branches off, based on the flow direction of the first heating medium (M1) in the first line section (L1), downstream of the trimmer heater (10) at a junction point (V2) in the first line section (L1) opens, • that in the return line (LR ) a second conveying device (3) conveying from the branching point (V1) to the joining point (V2) is arranged, and that of the product-carrying heat exchangers of the preheater and high-temperature zone (100, 100 + 1; 100, 100-1, 100- 2, ...; 100 + 1, 100 + 2, 100 + 3, ...) at least the first heat exchanger of the preheater zone (100) between its from the entire food product (P) interspersed product inlet (E) and product Exit (A) for all there are congruent flow paths between the latter branching and merging subsets of the food product (P)
