The invention relates to a process for the enzymatic extraction in an aqueous medium of oils, proteins and fermentable sugars from plant material, comprising the following steps: a) adding water to plant material having a particle size b) adding an enzyme mixture containing at least one cellulase, at least one hemicellulase and at least one pectinase, the ratio of pectinase activity to cellulase activity being at least 0.14 , preferably between 0.35 and 0.45, and the ratio between the activity of the pectinase and the activity of the hemicellulase being at least 7.10, preferably between 1.10 and 2.10, c) incubation under agitating the plant material and the enzymatic mixture to release in the reaction medium, oils, proteins and fermentable sugars, for a period depending on the desired yields, d) separation of the reaction medium for obtain free oil, an aqueous phase containing fermentable proteins and sugars, and a solid phase, e) optionally separation of an emulsion from the free oil or the aqueous phase, and recycling of the emulsion in the reaction medium, f) separation of proteins and fermentable sugars from the aqueous phase.
