PROBLEM TO BE SOLVED: To produce soybean lecithin concentrated in sterol glycoside and fatty acid esters thereof without fear of damaging safety when a man ingests.;SOLUTION: The soybean lecithin containing at a high concentration sterol glycoside and fatty acid ester components thereof is produced by hot-extracting pasty soybean lecithin or defatted soybean lecithin with ethanol and cooling the extract to fractionate precipitates. The ethanol used in extraction is preferably hot ethanol of 95-100% concentration and the cooling temperature is preferably ≤5°C.;COPYRIGHT: (C)2012,JPO&INPIT
