PPROBLEM TO BE SOLVED: To provide an operation method and an operation system of an absorption type water cooler capable of efficiently operating the absorption type water cooler while reducing generation of an exhaust gas. PSOLUTION: This operation system of the absorption type water cooler comprises the absorption type water cooler 10 capable of producing cooled water by utilizing water 11 (hot water) to which the heat is supplied from the external, a heat storage type heat supply device 20 capable of supplying the stored heat to the external through oil 23, and a heat exchanger 30 exchanging heat between the oil 23 and the water 11. Further it comprises supply control means 25, 26 controlling the supply of the oil 23 from the heat storage type heat supply device 20 to the heat exchanger 30, so that the oil 23 is supplied from the heat storage type heat supply device 20 to the heat exchanger 30 in starting by switching the absorption type water cooler 10 from a stop state to an operation state.
