The purpose of the present invention is to provide a process for producing polyester having reduced CD content and elution volume, said method making it possible to produce polyester such that there is little decline in the physical properties of the polyester even after passing through the production process, and the polyester has good formability. The present invention pertains to a process for producing polyester comprising an esterification reaction step in which an aliphatic diol and an aliphatic dicarboxylic acid are reacted, a step in which polyester obtained after passing through the esterification reaction step is palletized, and a contact treatment step in which the polyester pellets that are obtained are brought into contact with a mixed liquid containing ethanol and water, wherein the mixed liquid contains 10 mass % to 99 mass % of water with respect to the entire mixed liquid.
