Disclosed is a process for salting out and extracting organic acid from a fermentation broth, which is characterized by adding a dissoluble inorganic or organic salt and an extractant into the organic acid fermentation broth, stirring for mixing homogeneously, and standing at room temperature for phase separation. When the salting-out extraction forms two phases, the upper phase is a solvent phase rich in organic acid, the lower phase is a salt phase rich in other components. If the fermentation broth is not pre-treated, a layer of solid phase rich in bacteria and protein will be formed between the two phases. When three phases are formed, the upper one is a solvent phase, the middle one is a phase rich in organic acid, and the lower one is a salt phase rich in other components. The process has the features of simple process, short separation time, low cost and high recovery yield, therefore, it is a process for separating organic acid with good prospect of industrial application.
