PURPOSE: A feed additive for replacing chicken antibiotics using fermented onion juice, a producing method of a chicken meat quality controlling agent, and a use thereof are provided to use the fermented onion juice fermented by leuconostoc citerum. CONSTITUTION: A feed additive for replacing chicken antibiotics uses fermented onion juice fermented by leuconostoc citerum. The feed additive contains molasse and the fermented onion juice as active ingredients, and has antioxidant activity for improving the productivity of hens. The fermented onion juice is obtained by culturing the leuconostoc citerum in a medium containing 10-30% of onion juice or onion, 1.5% of molasse, and 1-5%(w/v) of fructose. The feed additive is mixed with feed for chicken to obtain chicken meat for cooking chicken soup with ginseng.
