PURPOSE: A producing method of a water soluble dietary fiber using rice processing byproducts is provided to economically obtain the dietary fiber with high yield using rice syrup cake. CONSTITUTION: A producing method of a water soluble dietary fiber using rice processing byproducts comprises the following steps: mixing rice syrup cake powder with distilled water, adding 0.1-1% of alpha-amylase, and reacting the mixture for 30-60 minutes at 90-100 deg C; adding 0.1-0.5% of protease into the reaction mixture, and stirring for 1-3 hours at 50-60 deg C before filtering to obtain a water-insoluble dietary fiber; adding 0.5-2% of sodium hydroxide solution into the water-insoluble dietary fiber, and processing for 1-3 hours at 70-90 deg C to obtain an alkali extract; desalinating and de-coloring the alkali extract using an ion-exchange resin; controlling the pH of the alkali extract into 4-6, and heating at 40-60 deg C; and adding cellulase, viscozyme, or their mixture into the heated extract, and stirring for 30-60 minutes to obtain water soluble dietary fiber fractions.
