PURPOSE: A method for making black Makkoli is provided to improve flavor and taste and to remove headache due to hangover. CONSTITUTION: A method for making black Makkoli comprises: a step of washing glutinous rice and black rice in a weight ratio of 70:30, washing, and soaking in water; a step of steaming and cooling by 30C to prepare hard-boiled rice; a step of mixing the hard-boiled rice and black sugar in a weight of 90-10 to prepare bred yeast; a step of mixing the bred yeast, malt, and nuruk in a weight ratio of 80:10:10 to prepare a distiller's grains; a step of mixing the distiller's grains, crude liquor, and mineral water in a weight ratio of 50:15:35; a step of fermenting at 20-30C for two days; a step of mixing mineral water, starch syrup, and black sugar in a weight ratio of 90:6:4 to prepare brewage water; a step of mixing rice-wine mash and brewage water in a weight ratio of 55:45 and fermenting at 20-30C for 2 days; a step of oriental medicinal herb materials and mineral water and boiling for 4-5 hours to prepare oriental medicinal liquid; and a step of mixing prepared Makkoli, oriental medicinal liquid, and 7% of Rhus coriaria extract.
