PURPOSE: A method for producing vinegar using Angelicae gigantis Radix buds is provided to obtain anthocyan component. CONSTITUTION: A method for producing vinegar containing Angelicae gigantis Radix buds comprises: a step of cutting Angelicae gigantis Radix buds and stems; a step of preparing sugar syrup by mixing 100 weight parts of water and 14-16 weight parts of sugar; a step of adding sugar syrup to Angelicae gigantis Radix bud ingredient; a step of fermenting at 20-26 degrees Celsius under aerobic condition for 2-3 days; a step of fermenting at 20-26 degrees Celsius under anaerobic condition for 10-21 days; a step of filtering the fermented juice; and a step of fermenting at 20-26 degrees Celsius for 2-4 months.
