PURPOSE: A producing method of helianthus tuberosus powder, and a helianthus tuberosus tea and drink using thereof are provided to offer the anti-diabetic activity and anti-oxidant activity of helianthus tuberosus to users. CONSTITUTION: A producing method of helianthus tuberosus powder comprises the following steps: washing helianthus tuberosus, and cutting the helianthus tuberosus into the thickness of 2-10mm; drying the cut helianthus tuberosus at 30-50 deg C: puffing the dried helianthus tuberosus in the pressure of 4-8kgf/square centimeter; roasting the dried helianthus tuberosus at 65-69 deg C for 10-30 minutes; and crushing the roasted helianthus tuberosus into the size of 20-80 meshes.
