PROBLEM TO BE SOLVED: To provide a method for economically producing a practical enzyme ingredient which has high purity and high quality, has a prescribed ascorbate oxidase activity, has no catalase activity or less catalase activity than a prescribed value, and to provide an enzyme ingredient obtained using the same.;SOLUTION: Cosmid pcs MAO1-dO is introduced to Acremonium chrysogenum small in a catalase secretion amount to obtain an Acremonium chrysogenum mutant, and the objective enzyme ingredient little mixed with the catalase is obtained from the culture product of the strain or its purified product.;COPYRIGHT: (C)2008,JPO&INPIT
