The process of produu00c7u00e7o of xanthan gum by using sucrose and / or glucose and glycerol as carbon source. The present invention relates to a process for the production of xanthan gum by using sucrose and / or glucose and glycerol as carbon source in the culture medium.The origin of the sucrose and / or glucose can be both sucrose and / or glucose as commercial food grade sucrose and / or glucose present in the aqueous extract of pod of mesquite.
