Obtaining polissacaru00cddeo type gum Xanana by use of Demerara sugar as a carbon source and nutritional supplement. The invention aims to reduce the cost of production of polysaccharide type xanthan gum when compared to the industrial process of bioconversion of sucrose or glucose.This invention features the optimization of parameters related to the concentration of the carbon source evaluated (Demerara sugar) and nutrient potassium phosphate and magnesium sulfate to obtain polysaccharide.
