The invention relates to a process for depositing an organo-mineral sol-gel anticorrosion coating on a stainless steel. Said process comprises, in order, the following steps: a) a stainless steel component is provided that has a surface; b) said surface is treated according to a treatment step; c) a layer of an organo-mineral colloidal composition is applied to the treated surface in order to be able to form said organo-mineral sol-gel anticorrosion coating. The treatment step b) comprises the following sub-steps: said surface of said stainless steel component is mechanically and chemically pickled according to mechanical pickling and chemical pickling steps; and, a passive layer is formed on said pickled surface, so as to be able to apply said layer of said organo-mineral colloidal composition to the passivated surface.
