The installation has a steam generating unit (4A) and/or an outlet (11A) of an intake unit (4B) of steam inside an enclosure (1) that are arranged partially above a surface (2) supporting a product (10) i.e. alveolate product, to be treated. An outlet (14A) inside the enclosure and a suction unit for suction of gas are provided partially within or below the surface supporting the product to be treated. A fluid reserve (6), a steam generating unit and/or intake unit of steam and interior of the enclosure are in direct communication with one another permanently. An independent claim is also included for a method treating foodstuffs.
