The present invention provides a method for manufacturing kimchi seasoning using phellinus linteus, oriental raisin tree, and dandelion extracts, the kimchi seasoning manufactured thereby, and kimchi using the kimchi seasoning which include; a first step which manufactures the phellinus linteus, oriental raisin tree, and dandelion extracts by putting a phellinus linteus of 2-5 weight, an oriental raisin tree of 3-6 weight, and a dandelion of 4-8 weight for purified water of 100 weight and boiling it for 1-3 hours; a second step which manufactures a paste containing the phellinus linteus, oriental raisin tree, and dandelion extracts by filtering the phellinus linteus, oriental raisin tree, and dandelion extracts manufactured in the first step and adding starch of 10-20 weight for the filtered phellinus linteus, oriental raisin tree, and dandelion extracts of 100 weight and mixing it; a third step which manufactures a marinade by adding chili powder of 120-150 weight, garlic of 10-20 weight, ground onion of 10-10 weight, ground ginger of 10-20 weight, and aekjeot of 20-30 weight for the paste containing the phellinus linteus, oriental raisin tree, and dandelion extracts manufactured in the second step and mixing it; a fourth step which mixes the marinade manufactured in the third step with seasoning materials formed of two or more materials selected among sliced radishes, sliced onions, chives, water parsley, a green onion, a pear, and an oyster.
