PURPOSE: Germinated barley with improved gamma-aminobutyric acid content, and a producing method thereof are provided to offer excellent palpability of the germinated barley to users by water-soaking and germinating barley in the constant condition. CONSTITUTION: A producing method of germinated barley with improved gamma-aminobutyric acid content comprises the following steps: soaking barley in water at 24-26 deg C for 22-26 hours; and germinating the barley at 14-16 deg C for 34-38 hours. The barley is glutinous barley.
