PURPOSE: A browning inhibiting composition for fruits and vegetables, and a browning inhibiting method using thereof are provided to enable users to safety use the composition without toxicity. CONSTITUTION: A browning inhibiting composition for fruits and vegetables contains 0.01-1wt% of chitosan, 1-3wt% of cornus officinalis extract, 1-3wt% of cysteine, 1-3wt% of citrate, and the balance of water. The easily browning fruits and vegetables are processed with the browning inhibiting composition, a KIF composition by spraying the KIF composition or dipping the fruits and vegetables into the KIF composition for 10 seconds-5 minutes, and are stored and distributed at 0-10 deg C.
