PURPOSE: A composition for removing the bad smell from meat using natural ingredients, and a meat product using thereof are provided to produce the composition without using chemical synthetic food additives. CONSTITUTION: A meat product using a composition for removing the bad smell from meat using natural ingredients is obtained by the following steps: mixing 10-30wt% of garlic, 10-30wt% of onion, 5-20wt% of ginger, 20-40wt% of acid keeper, and 30-55wt% of glutamic acid concentrate powder; firstly boiling the mixture with meat in water; mixing 10-35wt% of boiled mixture, 0.1-20wt% of white sugar, 0.01-10wt% of sodium inosinate, 0.01-10wt% of sodium guanylate, 0.1-20wt% of hydrolyzed vegetable protein, 0.001-5wt% of vitamin B1, 0.1-20wt% of glycine, 0.1-20wt% of yeast extract, and 60-85wt% of edible sa and secondly heating the mixture.
