PURPOSE: Lentinus edodes powder without bad smell, and a producing method thereof are provided to extract roasted lentinus edodes with water for removing the bad smell of the lentinus edodes. CONSTITUTION: A producing method of lentinus edodes powder by weight; roasting lentinus edodes at 180-220 deg C for 1-2 minutes; mixing 800-1,200 parts of roasted lentinus edodes by weight and 16,000-24,000 parts of water by weight; extracting the mixture at 90-100 deg C for 3-5 hours, and centrifugal separating the mixture for 10-20 minutes in the speed of 3,500-4,500rpm to obtain a lentinus edodes extract; and mixing the lentinus edodes extract and polydextrose in a weight ratio of 9-11:0.5-1.5, and freeze-drying the mixture.
