PROBLEM TO BE SOLVED: To provide a method for drying bean curd, by which the flavor and texture of the non-dried bean curd can intactly be restored.;SOLUTION: The method for drying the bean curd, including a step of cutting the bean curd; a vacuum-freezing step of vacuum-freezing the bean curd that has been cut; and a freeze-drying step of freeze-drying the frozen bean curd, is characterized in that a step of lyophilizing the bean curd is not passed before the vacuum freezing step.
