PROBLEM TO BE SOLVED: To provide a control method of a food frying machine and the frying machine, capable of creating and implementing an operation menu in optimum cooking conditions.;SOLUTION: All processes of cooking contents are divided into a plurality of small processes. In each small process, at least two of the length of an operating time, a level of heating power, a rotation speed of a pot, and a rotation speed of a stirrer are configured to be set into a plurality of stages. The operating time, the heating power, the rotation speed of the pot, and the rotation speed of the stirrer of each small process are set, and the operation menu of cooking is created.
