The invention relates to biotechnology and can be used in the wine industry.The strain of Saccharomyces cerevisiae yeast, deposited in the National Collection of Nonpathogenic Microorganisms under the number CNMN-Y-25, can be used in the production of dry red wines.The result consists in the selection of a local yeast strain for the production of dry red wines of high quality, possessing carbohydrate fermentability at high concentrations of phenolic compounds and increased formation of glycerol.
