The invention describes antimicrobial compositions, which comprise hydroxycinnamic acids and salts thereof, such as sodium, potassium, calcium and/or zinc, cinnamate, ferulate, coumarate, cafeate and mixtures thereof, which are applied in the pharmaceutical or food industry as a bactericide or bacteriostatic, with specificity in pathogen bacteria that pollute unprocessed or slightly processed food. The invention provides the means required for establishing an efficient barrier in food susceptible to be polluted with bacteria, also being specific and safe as it is based on the aforementioned compositions. The inventive compositions may be used in cosmetics, equipment for storing cereal and grains, and in food processors.
