SEMIAUTOMATIC TEXTUROMETER FOR THE DETERMINATION OF STRUCTURAL-MECHANICAL PROPERTIES OF FOOD PRODUCTS

A texturometer for the determination of structural-mechanical properties of food products comprises a body whereon two corrugated plates are fixed, between the plates a test sample is put, a permanent load is applied to the upper plate on one side, and at other side a linear displacement transducer is connected. The permanent load is created by means of unequal-arm lever which form provides parallel-plane displacement of the upper plate and which is connected to the upper plate by means of flexible cable. From the other side the upper plate is connected to metal plate which linear displacement is controlled with high accuracy by transducer place horizontally relative to the texturometer plane. Values obtained are transferred to personal computer by means of created software with further analysis and processing thereof in real time.
