SCORCHED METHOD OF MANUFACTURING OF SNACKS SCORCHED BROWN RICE AND BROWN RICE SNACKS

The present invention relates to a manufacturing method of scorched brown rice snack and a scorched brown rice snack. The present invention has a purpose of manufacturing the scorched rice snack having abundant nutrients while maintaining the original taste of scorched rice by manufacturing the snack through adding a hydrolysis stevioside solution to a mixture of roasted crushed rice and brown rice and puffing the mixture while extruding through an extruder. The manufacturing method of the present invention comprises: (a) a step of roasting crushed rice at a predetermined temperature; (b) a step of mixing the crushed rice roasted from the (a) step and brown rice at a predetermined ratio; (c) a step of adjusting the moisture content of the brown rice mixture by adding the hydrolysis stevioside solution to the brown rice mixture mixed in the (b) step; (d) a step of molding the scorched rice snack by inputting the brown rice mixture with the adjusted moisture content in the (c) step into an extruder, and extruding and puffing the brown rice mixture through a screw while heating the screw barrel at 150-160C; (e) a step of cutting the scorched rice snack molded via the extruder in the (d) step into a predetermined size; and (f) a step of cooling the scorched rice snack cut into a predetermined size in the (e) step at room temperature.
