The present invention relates to a bread crumb composition containing a grain powder to cook an oven baking cutlet, an oven baking cutlet using the bread crumb composition, and a method to cook the oven backing cutlet and, specifically, to a bread crumb composition wherein the meat is coated with the bread crumb composition and then roasted at the time of cooking a cutlet in an oven roasting manner; to an oven baking cutlet cooked using the bread crumb composition; and to a method to cook the oven baking cutlet. According to the present invention, the bread crumb composition containing a grain powder to cook an oven baking cutlet is coated on the surface of the meat, thereby allowing the meat to be roasted in an oven roasting manner and not fried in oil. Furthermore, according to the oven baking cutlet cooked using the bread crumb composition containing grain powder to cook an oven baking cutlet and the method to cook the oven baking cutlet, the oven baking cutlet is not greasy since the meat is not fried in oil but roasted in an oven; is preferred by all ages and sexes due to its good taste or texture; and is enjoyable since a small amount of oil is used to reduce the fat intake.
