The present invention relates to a method for improving storage of C. maxima, which is characterized in that C. maxima is harvested, processed with curing at the humidity of RH 60-70% and 25-30C for 10-15 days, immersed in 100 ppm of citric acid (pH 3-4) for 30 seconds, dried in the shade for 24 hours and stored. If C. maxima is cured and stored according to the method of the present invention, decomposition or spoilage of C. maxima is prevented, and long term storage of harvested C. maxima is possible, which is able to remarkably extend the shelf life while maintaining the marketability, and is expected to be usefully used in the industry.
