The present invention relates to an eel bone-processed byproduct extract which is extracted by low temperature vacuum and, more specifically, to an eel bone-processed byproduct extract extracted by low temperature vacuum, which has an anti-atherogenic activity and prevents and suppresses a vessel disease. The extract is prepared by washing and carefully selecting the eel byproducts such as head, liver, internal organs, gall bladder, and skin of an eel except the accessory parts of the eel, pulverizing the eel bone and byproducts by low temperature vacuum, and extracting from the pulverized powder. The extract has anti-antherogenic activity and prevents and suppresses vessel diseases, thereby having anti-aging and immune enhancement activities. Accordingly, the extract can be used as a health food.
