The present invention relates to a method to evaluate the degree of easiness of a quarrying plane using mechanical properties of rock which can derive the strength of each rock cleavage of the rock through the mechanical properties of the rock in accordance to the variations in stress applied to the rock, thereby accurately determining a quarrying direction of the rock different from each granite quarry; thus increasing a yielding percentage of quarrying. The method includes the steps of: quarrying a square rock block from granite; cutting the surface from the rock block in a direction parallel with three planes of rock cleavage; dividing the rock block into a plurality of square rock samples; producing each core test piece from the rock sample in a direction perpendicular to three planes of the rock cleavage; applying stress to the core rock samples; and measuring a mechanical response of the core test pieces in accordance to the stress applied thereto, and analyzing it for every rock cleavage to evaluate a degree of easiness of quarrying plane.
