Determining the quality of starting product in food production with respect to fungal attack, comprises detecting ergosterol by detecting a spectrum of a product present in a production container using a near-Infrared (NIR) spectrometer and transmitting the spectrum to a data processing unit for evaluating the spectrum with respect to the presence and/or the concentration of ergosterol in the product. The production container is associated with the NIR spectrometer. An independent claim is also included for using the NIR spectrometer in ergosterol detection and/or determination of the ergosterol concentration in the product, where the spectrum, which is detected by means of the NIR spectrometer, is evaluated by a data processing unit for determining the quality of starting products of food production with respect to fungal infection.
