In order to mould food products having at least one impression in relief, which is recessed and/or protrudes, the invention provides a moulding device (2) having at least one interface (3) which is disposed, removably or permanently, in the mould (1), in order to position at least one moulding insert (4) which has impressions in relief (5, 6), which are recessed and/or protrude, and is fixed, removably or permanently, to the interface (3). The latter, which is approximately in the form of a plate or sheet, or film of adhesive, is made of at least one material of foodstuffs grade and is able to be disposed inside a mould (1), which is rigid or flexible, against the base (7) and/or a side wall (8) of the mould. The insert (4) is also made of a material of foodstuffs grade, and its, recessed and/or protruding, impression(s) in relief (5, 6) are on a face of the insert which is turned towards the interior of the mould (1) when the insert (4) is fixed to the interface (3). Application to the personalized marking of food products, in particular bakery products, pastries and cookies.
