PROBLEM TO BE SOLVED: To provide physical property evaluation equipment and physical property evaluation method for grain flour dough which can perform a physical property evaluation of grain flour dough with high accuracy and can obtain data having good reproducibility.;SOLUTION: Physical property evaluation equipment for grain flour dough comprises: two jigs arranged to face each other to hook and hold internal circumference parts of a test ring bridge piece consisting of 1-100 g of the grain flour dough; shifting means pulling one jig apart at an appointed rate in one direction for another jig; and measuring means measuring tensile force between the two jigs and a distance between the two jigs.
