PROBLEM TO BE SOLVED: To provide an incision device for the neck skin of a poultry carcass, capable of automatically incising the neck skin of the carcass of poultry surely to a neck skin tip part.;SOLUTION: An incision device for the neck skin of a poultry carcass includes: shoulder part holding means for holding the shoulder part of the poultry carcass from which a head is cut off and guts are removed; neck skin separating means for separating a belly side part of the neck skin from a neck bone by advancing from an opening formed on an abdomen of the poultry carcass through an abdominal cavity into between the belly side part of the neck skin and the neck bone, and extending along the neck bone over a neck skin tip part; and neck skin incising means for incising the belly side part of the neck skin, separated from the neck bone from the tip part to the shoulder-side base part using a pair of shears.;COPYRIGHT: (C)2015,JPO&INPIT
