The invention relates to a method for producing 1-ketose on an industrial scale using recombinant fructosyltransferase (FTF) isolated from cane fescue, constitutively expressed in a non-saccharolytic yeast host. According to the invention, recombinant (FTF) type sucrose: sucrose-1-fructosyltransferase (1-SSTrec) is obtained on a constitutive and stable basis and in high yields in both the supernatant and cell pellet of the culture of the Pichia pastoris strain. The invention also relates to a method for producing 1-SST on an industrial scale. The resulting recombinant enzyme is used for the serial enzymatic production of fructooligosaccharides (FOS), in particular 1-ketosis, from sucrose. The method according to the invention allows to obtain the percentage conversion of FOS at the level of more than 55%, containing more than 90% of 1-ketose.
