Process for the preparation of hydrolyzed cereal and pseudocereal concentrates consists of the fact that the cereal and / or Pseudocereals grains or materials and products with a majority interest cereals or pseudocereals, or mixtures were diluted with water 1: 1 to 1: 8 by weight, at 30 � C to 85 � C are added the amylolytic enzymes, or one or more enzymes selected from the group of proteases, xylanases, hemicellulases, lipases. Each enzyme has a volume which is at a given temperature, pH and the fermentation time needed for the cleavage of at least 5.0% of the total of starch and/or dextrin to products of the enzymatic hydrolysis of cereal in the dry matter of the concentrate, typically in a concentration of 0.05 to 10.0% by weight on the dry ingredients. If necessary, the pH was adjusted to 4.0 to 7.0 and the mixture is stirred for 1 to 15 hours fermented, then the mixture is heated to 90 � C to 140 � C where it is left 5 to 45 min . Also disclosed is a cereal enzymatically hydrolysed concentrate which contains in the dry state of at least 5.0% by weight glucose, maltose, maltotriose alone or in a mixture, generated by enzymatic hydrolysis, the viscosity of the end of the fermentation is from 5 AU to 2500 AU at 65 � C and a pH of 4.0 to 7.0 and an apparatus for preparing a concentrate of hydrolysed cereal.
