The invention relates to a kit comprising an electrochemical immunosensor for the quantitative determination of fumonisin B1. Said immunosensor is a direct competitive electrochemical immunosensor, where specific antibodies of the mycotoxin FB1, immobilised on magnetic microparticles functionaised with protein G, are used. The fumonisin B1 from the sample to be analysed competes with a fumonisin B1 marked with horseradish peroxidase (FB1-HRP conjugate) for a biorecognition element which is the monoclonal antibody immobilised on the magnetic particles. The step of the enzyme reaction and the electrochemical detection take place on a multiple electrode, preferably made of 8 carbon screen-printed electrodes, the electrons generated following the enzyme reaction being electrochemically detected. The invention also relates to the method for detection and electrochemical quantification of the mycotoxin fumonisin B1 (FB1) using the kit and to the use thereof for detection and quantification in cereals and derived products.
