The present invention relates to a novel saccharomyces cerevisiae strain used in manufacturing a distilled spirit, a distilled spirit manufactured by using the same and a distilled spirit manufacturing method using the same. The distilled spirit manufactured according to the present invention has a very excellent characteristic of an organic function because of proper balance among flavor contribution ingredients by the new saccharomyces cerevisiae 88-4 strain when alcohol fermentation is performed.
