The present invention relates to a manufacturing method of a granule having improved storage stability of anthocyanin pigment of extracts of a mulberry, a blueberry, and a s. chinensis baillon having biological properties such as anti-cancer, anti-diabetes, anti-inflammation, anti-hyperlipidemia, anti-oxidation, etc. as well as providing a health functional food material and a health functional food. The present invention comprises the steps of: (a) drying a sample including an anthocyanin pigment property from selected one among the mulberry, the blueberry, and the s. chinensis baillon; (b) manufacturing an extraction solvent; (c) obtaining extract including anthocyanin; (d) removing impurities by filtering the extract including a pigment of the anthocyanin; (e) concentrating a filtrate into 30 brix; (f) manufacturing a mixture having alginate and liquefied calcium; and (g) passing the mixture for manufacturing a granule into a granulator.;COPYRIGHT KIPO 2015
