The present invention relates to a method for manufacturing fermented brown rice containing organic acid, and fermented brown rice manufactured thereby. According to the present invention, the method comprises: a first step of mixing at least seven kinds of brown rice to prepare mixed brown rice; a second step of mixing the mixed brown rice with water, inoculating Lactobacilus plantarum cw5-1 to the mixture, and fermenting the same for 22 to 26 hours at 32 to 34C; and a third step of drying the fermented mixed brown rice for 16 to 20 hours at 38 to 42C to manufacture fermented brown rice.
