The present invention relates to a method for extracting a concentrate of bitter gourd, and a mixed concentrate using the extract of bitter gourd. More specifically, the method for extracting a concentrate of bitter gourd uses salty water to remove bitter taste from the concentrate of bitter gourd and extracts the concentrate under low temperature so as to prevent nutrients such as vitamins or the like from being destroyed. The method for extracting a concentrate of bitter gourd according to the present invention comprises: a cutting step of washing and shredding harvested bitter gourd into pieces with a size of 0.5-1 cm; a bitter taste removing step of immersing the shredded bitter gourd into salt water with a concentration of 0.5-3.4% for 1-3 hours to remove unripe flavor and bitter taste; an extracting step of washing the shredded bitter gourd 2-3 times after performing the bitter taste removing step in order to remove residual salt, and extracting a concentrate with hot water under a temperature of 70~90°C for 90-120 minutes; and a concentrate manufacturing step of heating the concentrate extracted with hot water to be concentrated for the concentration of glucose to be 60-65 Brix.;COPYRIGHT KIPO 2016
