The present invention relates to a manufacturing method of a dongchimi base using GABA-generating Lactobacillus and Opuntia humifusa. More specifically, provided is a method for manufacturing a dongchimi base by performing inoculation with starters via a two-stage fermentation process using Bacillus subtilis and Lactobacillus; mixing an extract and a residue obtained by grinding all the ingredients used for dongchimi; and adding Opuntia humifusa to a mixture of the extract and residue in a paste state without adding water. The dongchimi base manufactured by the method is aimed at imparting color and functionality to the dongchimi base by combining Opuntia humifusa with the dongchimi base. Accordingly, the dongchimi base to which water has not been added is manufactured, thereby contributing to the industrial development.
