The present invention relates to a method for manufacturing jujube chips using dried jujube, and to jujube chips made by the same manufacturing method, which restore the dried jujube to a shape of fresh jujube, and slice and dry the jujube to maintain the shape of the fresh jujube, thereby enabling a user to feel as if eating the fresh jujube, and giving crisp texture while making sugar content higher, so various types of ingestion such as a snack or the like are possible. The method for manufacturing the jujube chips using the dried jujube according to the present invention comprises: a first step of cleaning the dried jujube with water; a second step of applying water to the dried jujube cleaned via the first step to adjust the percentage of water content to 40-50 % and to perform a fermentation process; a third step of punching the jujube fermented via the second step to remove seeds for manufacturing hollow cylinder type jujube; a fourth step of fermenting the cylinder type jujube having passed the third step; a fifth step of slicing the cylinder type jujube, fermented via the fourth step, in a ring form; and a sixth step of drying the ring type jujube chips sliced via the fifth step.
