PROBLEM TO BE SOLVED: To provide a gelling agent having a gelling ability to a metal ion capable of being coordinated with two or more carboxy groups so as to respond to different temperatures depending on the metal ion species.;SOLUTION: A gelling agent includes as an active ingredient an N-acylamino acid represented by formula (1), (wherein R₁ denotes a 6-20C hydrocarbon; R₂ is a methine group or a benzene-triyl group; R₃ is an amino acid side chain without a polar functional group or a hydrogen; and R₄ is hydrogen or an inorganic salt such as sodium and potassium).;COPYRIGHT: (C)2013,JPO&INPIT
