PROBLEM TO BE SOLVED: To provide a method for producing cream cheese products containing galacto-oligosaccharide and having a significantly reduced lactose concentration.;SOLUTION: More specifically, lactose-containing dairy substrates are contacted with one or plural lactase enzymes having hydrolytic and trans-galactosylation activities effective for converting at least 20% of the lactose in the dairy substrate into galacto-oligosaccharide. The enzyme-treated dairy substrate is then processed into a galacto-oligosaccharide-containing cream cheese product having a reduced lactose concentration.
