combination of fat substitutes for the total or partial replacement of fat in food products, and a food product comprising the same. The present invention relates to a combination of fat substitutes for the total or partial replacement of fat in food products such as ice cream and cake comprising: (a) a carbohydrate-based fat substitute, for example, low maltodextrin of of; (b) one or more emulsifiers, for example mono- and diglycerides and optionally glycol monostearate; and (c) one or more stabilizers, for example carboxymethylcellulose and guar gum. The present invention also relates to a food product comprising the same.
