production and extraction of procyanidins from plant cell cultures. A method of preparing cocoa oligomeric procyanidins from cell cultures grown in the presence of monosaccharide may increase the production of procyanidins as follows: culturing sufficient cells to result in the production of oligomeric procyanidine cocoa at a first rate; and introducing a monosaccharide into the cells sufficient to induce cells to produce cocoa oligomeric procyanidins at a second rate that is higher than the first rate. The method may further include extraction of cocoa oligomeric procyannidines from cells and such extraction may occur from 1 day to 21 days after introduction of the monosaccharides. optionally, the monosaccharide may be introduced in an amount from about 0.5% to about 20% by volume of culture medium. the monosaccharide may be sucrose, glucose, fructose or the like. The monosaccharide may be induced during or after a late phase of an exponential growth state.
